The Department of Food Science at the University of Copenhagen (UCPH FOOD) invites applications for a position as Professor in Bioflavour from 1 August 2021, or as soon as possible thereafter. The same position is in parallel advertised as Associate Professor of Bioflavour.

Bioflavour addresses the biosynthesis and characterisation flavour molecules in plants, microorganisms, cell cultures as well as synthetic biological systems. The development of more sustainable foods for the future will include new raw materials, bioconversions and processing approaches, and challenges the generation of desirable flavours acceptable to consumers. There is a need to find new ways for generating bioflavours and understand how they interact with food matrices and processing. This requires the understanding of precursors and pathways for bioflavour generation, e.g. in fermented food systems.
The present position aims at developing the Departmental research on bioflavour synthesis of relevant target molecules important to food flavour or compounds that can serve as bioflavour precursors during food processing. The research will be primarily carried out in labscale cell factories and in food matrices (e.g. solid state fermentation). The department has recently acquired state-of-the-art instruments for following real-time flavour formation and 2D GC-MSO for sensory impact characterisation studies, forming the instrumental basis for building the research area.
The position is part of the flavour group at the Department but the candidate should develop the research in close collaboration with the food microbiology, food physics, and food consumer groups. The Department has an excellent scientific environment for integrated approaches to food design, innovation, and addressing sensory preferences of consumers.
Applicants are required to have university level teaching experience, documented teaching competencies and must be able to explain and reflect upon own teaching practice and portfolio. Formal pedagogical training or supervision equivalent to the University of Copenhagen teacher training programme for assistant professors is required.
Qualifications are expected within the following areas:
- Research experience in analytic chemistry, biochemistry, metabolic and enzyme engineering, cell factories and bioinformatics
- Good project management and leadership skills of research projects involving collaboration between academia and industry
- Experience with international collaborations
- Success in obtaining research grants
- A collaborative and innovative mindset
- Documented scientific impact and outreach of conducted research
- Good teaching skills
In addition to the above mentioned research qualifications, applicants are required to have a relevant PhD degree within bio-engineering, biotechnology or biology.
Duties include the applicant’s own research, development of the field, assessment tasks, grant applications, and research management such as supervision and training of research fellows and other staff. The successful applicant must also teach, supervise, prepare and participate in examinations, and fulfill other tasks requested by the Department.
Assessment of applicants will primarily consider their level of documented, original scientific production at an international level, including contributions to developments in their field, as well as their documented teaching qualifications. Managerial and out-reach qualifications of applicants including ability to attract external funding will also be considered.
Six overall criteria apply for professor appointments at the University of Copenhagen. The six criteria (research, teaching, societal impact, organisational contribution, external funding and leadership) are considered a framework for an overall assessment of the candidates. Commencing salary is currently DKK 631.596 including annual supplement (+ pension DKK 108.003).
